The International Association of Culinary Professionals annual conference in Austin is fast approaching, and I have been helping to put together our signature Kids in the Kitchen event.  It has been a major team effort, and I was thrilled when Le Creuset signed on to sponsor our garden to table workshop with children.  They will be giving generous gift packages to each of the families we cook with, along with some tools for us to use in the Austin Whole Foods Market culinary center.

What’s The Big Deal with Steamed Foods?

They are easy, fat free, and preserve the nutrients.  The concept is simple: elevate the to-be-steamed ingredient above some boiling water, and cover it with a lid.  The steam rises, cooking the ingredients quickly.  It’s a fantastic method for quickly cooking chunks of sweet potato or potato before you mash them up, or for items like broccoli or green beans.  The color of steamed foods is brilliant and they stay incredibly moist.

    I steam foods all the time but my steamer is so small. I’d love to win the giveaway. I started steaming when my kids were infants because I could cook the veggies for our family and keep some in for the little ones until they were mush. My kids started on finger foods very early and it was so much easier than feeding them jars of babyfood. They are both great eaters still and love their veggies.

    My steamer tip would be to don’t be afraid of seasoning on steamed veges. It doesn’t always have to be about butter and cheese on top — fresh or dried herbs can really enhance the flavor. Garlic happens to be my fav addition :)

    I’m so excited about the steaming recipes you shared that I’m a little embarrassed to say that all I do with our microwave steamer, currently, is make broccoli, cauliflower, and green beans. They taste good that way, but I’d like to experiment with more steaming ideas like those you shared.

    I used my steamer for making baby food with an assorment of fruits and veggies when my son was a baby. But my personal favorite in the steamer is definitely artichokes. Mmmm.

    I’m currently using a 60 year old steamer handed down from my grandmother to my parents and then to me when I started making my son’s baby food. I LOVED steaming! Best tip for new steamers, don’t steam veggies til they mush. Stop steaming veggies when their color is brilliant, they’ll be perfectly cooked, having amazing flavor and your kids will love them more than veggies prepared any other way. Toss with a lil olive oil and a dash of your favorite seasoning for variety. My son is 21 months and gets excited about green beans!

    There is an Asian 3 bean salad recipe that our family loves and I use the steamer for the green beans and edamame. Also for other veggies. I’ve even steamed fish but the kids weren’t too hot on the texture. I currently have this tiny steamer and with my kids growing and eating more and more, I’m in the market for a bigger and better one.

      No, you don’t lose! By leaving that great question, you entered. The other stuff is optional for additional entries :-) Yes, some people steam fish, but I think if it’s not done properly, it can make for a mushy consistency. I hope other people chime in here about that. Hint Hint…

    The best suggestion I have for using a steamer, is watch your time, sometimes a few minutes is all you need. I have been known to steam way too long, losing taste and nutrients..

      Thanks Samantha! I think that for some people, they don’t have a steamer tray big enough to hold bigger foods, like artichokes. Some trays are tiny and some just sit towards the top of the pot. And some people just need something new :-) This one is pretty sexy, if I do say so, myself! Plus, it can be a regular pot too, if you don’t put in the insert, which is wonderful.

  35. We love to steam but I would say we are caught in a rut. My fave things to steam are Bao, Potstickers, Shu Mai and, of course, veggies! We usually steam carrots and arties… and you can lightly steam fish as well. We usually add lemon slices or a bit of soy sauce and ginger when steaming.

  36. My best tip: when steaming things that take a long time (e.g. artichokes), keep an eye on the water level, use a timer. The bottom of my steamer ruined when water ran out (ruined the artichokes, too). Thus, it would be wonderful to win this steamer!

    my favorite things to use a steamer for is for artichokes. steam them with some olive oil and lemon and then about 10 minutes before they are done, put them on the grill for an amazing summer starter! delicious!

    I have chickens in my backyard. You can’t peel hardboiled eggs if the eggs are less than a week old, but if you steam them, the peels come right off. (I wrote about the science of this on my blog)
    Right now I’m using my basket steamer, but would love to switch to this pot.

    My one steamer tip is SET A TIMER! I always end up with stuff too mushy and then it dawned on me that I have a kitchen timer. Now stuff comes out yummy. I wish I had a big steamer pot, I don’t even have a little steamer tray. I use my pasta pot. My steamer basket broke. :( I’d love to be able to steam artichokes, I hate boiling them for hours!

    The only steamer I’ve ever used are those weird folding metal basket thingys – which are great for a few veggies but that’s about it. I love the idea of steaming potatoes, corn, etc. instead of boiling. We also LOVE seafood boils, which I bet this would work for also.

    My best tip: this is a baby food recipe, but can be converted into a muffin recipe.

    I steam bananas. Makes them super sweet. (Add bananas & reserved steaming liquid to cooked quinoa & black beans. Mash it all up. It is a really yummy & super healthy baby food!)

    I love that the steamer can be used so quickly and steamed things done right are such a better texture than other methods. I use mine in conjunction with boiling other ingredients, thus making it very energy efficient, too!

    I used my old and battered steamer to steam veggies for my daughter’s baby food last year. I would then puree the steamed veggies and fruits with different herbs and sometimes spices. Her favorite combinations were sweet potatoes with cinnamon, carrots with ginger, sweet peas with mint and plain butternut squash. I would love this new steamer and would use it to steam broccoli and other favorite veggies.

    Desperatley need a steamer again! Our rusted out about 2 years ago and had to get tossed (shows you the quality!). We haven’t been able to justify the expense… so we try deep fry pans, but it makes the artichoke steaming a challenge :). We used to steam kid-made dumplings, artichokes with a little white wine, butter & garlic, or chile, cheese, and corn tamales (also kid made btw)!

  121. We love steaming veggies but (true confession time) my favorite thing to steam is tamales. You can find tamale ingredients (masa, corn husks) at many well-stocked grocery stores these days and then you can get creative with your fillings. We love to fill them with fresh corn, spinach, onions, squash, cheese…the list goes on. Now if only I had a steamer big enough to make a giant batch! : )

    after steaming your veggies, let the water in the pan beneath the steamer(as long as no salt has been added) cool and use it to water your garden or indoor plants.That water has nutrients from the cooked veggies and helps your plants grow better.

    Don’t just use water for “steaming”. You can add various things to the water like jasmine, rose, citrus (lemon, lime, orange) peel. You can add ginger to the water, herbs, aromatics. You don’t just have to use water as the liquid. You can use tea, chicken, beef or vegetable stock, wine, etc. Imagine shellfish steamed in white wine (maybe a pinot gregio) and clam juice. You can even line the steaming basket with leaf vetables. In the above recepie, use seaweed (avaiible from your fishmonger or an asian store). You can use banana leaves or even cabbage leaves. In addition to imparting great flavor, you can then serve on the leaves. How about potstickers steamed in jasmine tea and served on baby bok choy.

    @ Thy, it depends on how much liquid you started with, how much steam is being generated, what type item you’re steaming and how “well done” you like your food. Usually 5-20 minutes is enough.

  174. I steam artichokes. I cut them in half and clean them first before steaming them, makes them easier to eat. We all love them!

    I’m currently a student at le cordon bleu.. learning lots of cooking techniques and lots of fine cooking and cuts.
    How would I use a steamer(double boiler)? first, I can use the bottom part of the pan as a stock pot when needed. Second, It can be used to keep food warm while preparing other dishes to be served. Simply boil water(with both pieces together) and place the ready to serve dish onto the purifirated piece(strinner like)and the steam will help to keep the food warm. And not forgetting what is good for, steaming Vegetables.

    I love steaming vegetables. It’s almost peak season of local asparagus – fresh good can’t get any better than this. I started my day with picking up fresh picked asparagus at the farm – I even brought a still warm sourcream coffee cake for the farmer to thank them for their hard work. I am thinking about steaming the asparagus and serving it with a lemon shallot vinaigrette. And a side of broiled salmon my US Dad caught 2 days ago. Yes, it’s that time of the year where we try to live without grocery stores and support local farmers.

    My steamer is just a small bit that allows me to have about an inch of water in the pot. It doesn’t allow me to steam things for very long, but I do enjoy using it for broccoli. I’ve heard good things about steaming squashes and think that would be fun to try.

    I have never used or seen a steamer before. I have a 9 month old daughter and I prepare all her baby food. A steamer would be wonderfully used to steam her food quicker and for me to learn new recipes. I am always trying recipes and I have been told Steamers are a great kitchen appliance.

    My steamer tip is that when steaming asparagus, broccoli, or any vegetable that is easy to overcook – turn off the heat maybe a minute before you think your vegetable is done. The residual heat from the water will keep it cooking a bit and the heat the vegetables will help them coast to perfection.
