There are just some days that I feel very lucky. I am sure you can relate. Today, I feel like that – I get to show my love for my special friend Amanda, who is going to have a baby. The big bummer is that I can’t congratulate her in person because she lives on the other side of the country. That’s okay. I am resourceful – some friends and I have decided that we can show our love for her by hosting a virtual baby shower!
Because Amanda is a baker extraordinaire, my kids and I decided we’d bake her some Hamentashen, a traditional cookie for Purim.

We rolled out the dough...

We cut it out...

Then we filled it and started folding

And we filled the trays...

And after baking, they were ready to share...

Hamantaschen
Many thanks to our family friend, Lauran Kaplan for this recipe.
Ingredients:
1/2 cup soft unsalted butter
2/3 cup sugar
1 teaspoon vanilla extract
2 eggs
2 1/4 cups flour
2 teaspoons baking powder
pinch of salt
Directions:
- Cream together butter, sugar, and vanilla.
- Meanwhile, sift together flour, baking powder and salt.
- Then stir in eggs.
- Blend in flour mixture.
- Wrap dough in plastic wrap.
- Refrigerate for a few hours.
- When ready to bake, roll each half of dough to 1/8-inch thickness.
- With a 3-inch cookie cutter, or the rim of a water glass, cut out circles of dough.
- Use a mini ice cream scoop to place filling in center of each circle.
- Pinch the edges tightly together, forming a triangle.
- Leave a little of the filling showing in the center.
- Place on a baking sheet with parchment paper and bake in a preheated 350° oven for 15–20 minutes until golden brown.

These are just beautiful, Michelle. I’ve never had Hamentashen cookies before. Can you use anything you want for the fillings, or do some things work better than others?
my guess would be some type of hazelnut spread, chocolate chips and jam??? I really don’t know. Have never seen these before but they look so cute and very child friendly . Can you tell us please what the fillings were???

Hamantaschen filling I have used over the years: homemade apricot lekvar; poppyseed filling; chopped nuts with cinnamon and sugar; have never used prune lekvar out of personal preference – Nutella seems to have come into popularity and one friend of mine used pieces of chocolate – any kind of jam would be delightful – cheese filling with raisins – you name it and while it may not be traditional, it will be delicious.
And to Amanda, very best wishes from an 89 year old grandmother of four joys who are very young in spite of my age.

I did use nutella – and it was delicious. The chocolate chips were quite dry, so we’ll avoid those the next time around
