Inspired by our friend’s Great Big Vegetable Challenge, we are in the midst of getting Squashed! So far, we have tried Acorn, Butternut, Delicata, Kabocha, Spaghetti and Sweet Dumpling – all grown by our friends at the Full Belly Farm.
During Thanksgiving, my daughter fell in love with “stuffing”, which is what inspired tonight’s squash dish. I halved and roasted a few sweet dumpling squash and stuffed them with bread stuffing. Yum!
So far, the Delicata is the undefeated champion. Anyone want to squash us with another one to try?
